Brown Sugar Glazed Pork Chops

Ingredients 

  • 6 boneless pork chops about 1” thick

  • ½ cup brown sugar firmly packed

  • ½ cup apple juice

  • ¼ cup canola oil

  • 1 tbsp sodium reduced soya sauce

  • ½ tsp ground ginger

  • Salt & Pepper to taste

  • 1 tbsp cornstarch

  • ½ cup water

Method 

  1. Preheat grill on high for 10 minutes.

  2. Meanwhile, in a small sauce pan, combine brown sugar, apple juice, canola oil, soy sauce, ginger, salt & pepper. Bring to a boil.

  3. Combine cornstarch & water in a small bowl & whisk into brown sugar mixture.

  4. Add cornstarch mixture to sauce pan. Stir until thick.

  5. Grill chops on oiled grill over medium-high heat, about 6 – 8 minutes per side (to an internal temperature of 155⁰F or 68⁰C).

  6. Brush often with glaze & again before removing chops from the grill. Do not overcook.

Onion Sausage

This recipe is for all the hunters and home butchers out there. This is a super easy recipe that would be great for grilling on the barbeque!

Ingredients

  • 10 lbs Pork Butt
  • 1/3 Cup Salt
  • 1 - 1/2 Tbsp. Powdered Dextrose
  • 6 Tbsp. Finely Chopped Onions
  • 1 Tbsp. Coarse Black Pepper
  • 1 Tbsp. Ground Marjoram 
  • 2 Cups Ice Water

Method

Grind pork butts through a 3/8'' grinder plate and fat meat through a 1/8'' grinder plate. Add all remaining ingredients, mixing until evenly distributed. Sausage is then stuffed into a 35-38 mm hog casings and placed into a 38-40 F cooler for a 24 hours before using. Freeze unused portions after a few days of refrigeration.

Cajun Roasted Pork Loin

Ingredients 

  • 2 tablespoons butter
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground mustard
  • 2 cloves garlic, minced
  • 1 (4 pound) pork loin roast
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 carrot, cut into 1/2 inch pieces
  • 1 red bell pepper, chopped
  • 1 stalk celery, chopped
  • 1 large onion, chopped
  • 3 tablespoons all-purpose flour
  • 1/2 cup chicken broth

Method

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. Melt the butter in a small skillet over medium heat. Stir in the cayenne, oregano, pepper, thyme, mustard, and garlic. Cook for 1 minute. Use a paring knife to make several small incisions in the fat side of the meat. Stuff the slits with the spice mix, and rub the remaining mix over the surface of the meat. Sprinkle the roast with salt and pepper.
  3. Heat the olive oil in a roasting pan over medium heat. Put the roast in the pan, and surround with the carrots, red pepper, celery, and onion. Lightly salt and pepper the vegetables. Place roasting pan in preheated oven, and cook for 1 hour and 45 minutes. Increase the oven temperature to 425 degrees F, and cook for an additional 15 minutes to brown the meat. Cook until meat is 145 degrees F (63 degrees C). Remove roast from pan, and let stand 10 minutes before slicing.
  4. Place the roasting pan, with the pan juices, over medium heat. Whisk the flour into the hot drippings, and cook for 3 minutes. Pour in the chicken stock and cook, whisking occasionally, for 6 minutes. Strain sauce, and serve with the sliced pork roast.

Quick and easy meatballs

Super fast, easy, and delicious recipe. Great for serving as an horderve or as a meal. 

Ingredients 

  • 1/2 lb Lean Ground Beef
  • 1/2 lb Lean Ground Pork 
  • 3 Tbsp. French Onion Soup Mix
  • 1/4 Cup Bread Crumbs
  • 1 Large Egg

Method

  1. Pre heat oven to 350 F
  2. Thoroughly mix all ingredients together 
  3. Form bite size balls and place on greased baking sheet
  4. Place in middle oven rack and cook for approximately 20 minutes, turning occasionally
  5. Meatballs are cooked when centre is no longer pink.

Saucy Pork Chops

Ingredients:

  • 6 pork chops, 3/4'' thick
  • 1 medium onion, thinly sliced
  • 1- 10 1/2 ounce can condensed cream of chicken soup
  • 1/4 cup ketchup 
  • 2-3 tsp Worcestershire sauce
  • 1/2 cup water

Method

In skillet, brown chops on both sides in a small amount of hot fat; season with salt and pepper. Top chops with onion slices

Combine remaining ingredients and pour over chops. Cover; simmer for 45 to 60 minutes or until done. Remove chops to platter. Spoon sauce over top. Yields 6 servings.
