Sara Says: "I highly recommend investing in an internal temperature gage. (Meat prob) so easy to monitor your meat without interrupting the temperature in the oven."



This is for a 5-7 pound roast

2-Tbsp coarse salt
1-Tbsp coarse pepper
1-Tbsp garlic
1-tsp onion powder
1-tsp oregano
1-tsp tyme
1-tsp crushed peppers


  1. Let roast rest at room temperature for 30 minutes before cooking
  2. Mix spices together 
  3. Rub all over roast
  4. Preheat oven to 450
  5. Place roast in oven for 15-20 minutes. Then without opening the oven, reduce the heat down to 325 and leave in there until roast reaches an internal temperature of 140 (approx 2 1/2 hours)
