Easy Instant Pot Chicken Noodle Soup
1. Remove the skin from a whole chicken ( 3- 5lbs each)
2. Place the chicken in the Instant Pot and fill to the MAX line with water
3. Close the lid and ensure the vent is CLOSED
3. Select the "Manual" mode and cook for 60 minutes
4. Once cooking is complete, release the pressure and remove the chicken
5. Add your spices to the broth, here is what I use:
- 10 peppercorns
- 4 whole cloves
- 2 whole star anise
- 3 bay leaves
- 1 piece dried ginger
- 1/4 cup dried parsley
6. Close the lid and cook on manual for an additional 10 minutes
7. In the meantime remove the meat from the bones of the chicken
8. Once cooking is completed release the pressure from the pot, open it up and add the meat
9. Add your cooked noodles and serve!
Note: You may want to add a source of salt to add flavour. I like to use Knorr chicken broth powder mix - season to taste.
